Black Dirt Bourbon was originally produced at Warwick Valley Winery and Distillery, but the growing demand for New York produced spirits required a distillery with increased capacity. The result, a 4,000 facility, with a unique 60 foot column still, that will allow for a 20X increase in production. Warwick Valley Winery & Distillery founders Jeremy Kidde and Jason Grizzanti had founded New York State's first micro-distillery in 2001 (and the first distillery in the Hudson Valley since Prohibition). They quickly developed a reputation for excellent fruit based brandies and liqueurs, and decided to expand into more traditional spirits. The term Black Dirt is "a terroir reference to the dark, famously fertile soil left behind by receding glaciers 12,000 years ago. Today the 'Black Dirt' regions covers 22 square miles in Orange County and the soil - picture chocolate cake - is prized for the product it yields". And, while the 'Black Dirt' is famed for excellent onions, "it is also particularly kind to corn". And, of course, excellent corn is the basis for excellent bourbon. The bourbon is produced from 80% 'Black Dirt' corn and aged in #3 Char barrels (the most popular char level - of 4 - for distillers). This rich and flavorful bourbon deserves to be included in your personal bourbon rotation.
Black Dirt Description
The latest venture of Warwick Valley Winery & Distillery, Black Dirt Bourbon takes its name from the dark, fertile soil left by an ancient glacial lake that once covered thousands of acres of upstate New York. Although perfectly suited for growing crops such as corn, this land has never been used for bourbon production until now. Both the nose and palate offer pronounced notes of caramel, toffee and vanilla, which merge with hints of oak and baking spice on the lingering finish.
